Quiznos Batch 83 Sauce Recipe

I’ve already shared a lot of amazing sauces this month, like, Domino’s Garlic Parmesan Sauce, Luby’s Tartar Sauce, Arby’s Three Pepper Sauce, and more. But I’m dubbing Quiznos Batch 83 Sauce “The sauce of the month” because it’s super tasty. Made with simple ingredients like canned tomatoes, sweet red peppers, Anaheim or Cubanelle peppers, onions, jalapeño peppers, sugar, cider vinegar, and a blend of spices including salt, bay leaf, celery seeds, cinnamon, ginger, nutmeg, pepper, and cloves, this sauce offers a wow-factor taste that’s hard to beat.

It’s easy to make and requires just a bit of chopping, simmering, and blending to achieve a rich, flavorful sauce that can elevate any dish. Personally, I like to use it as a pasta sauce for its robust flavor and smooth texture, but it’s equally fantastic as a pizza sauce, a tangy glaze for grilled meats, or even a dip for crusty bread. Quiznos Batch 83 Sauce is truly versatile and adds a delicious twist to both everyday meals and special occasions.

This sauce is simmered to a thick consistency, then optionally blended for a smooth texture (I prefer to blend it well).

How to make Quiznos Batch 83 Sauce

Ingredients

  • 4 cans (28 oz each) of canned tomatoes
  • 4 cups chopped seeded sweet red peppers (about 1 lb)
  • 2 cups chopped seeded Anaheim or Cubanelle peppers (8 oz)
  • 1 cup chopped onions
  • 1/4 cup chopped seeded jalapeño peppers
  • 1-1/2 cups granulated sugar
  • 1-1/2 cups cider vinegar
  • 1 tsp salt
  • 1 bay leaf
  • 1/2 tsp celery seeds
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground ginger
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground black pepper
  • Pinch of ground cloves

Directions

Step 1:

  • Drain the canned tomatoes and reserve the liquid if needed.
  • Chop the canned tomatoes to make about 9 cups (2.25 L) of chopped tomatoes.

Step 2:

  • In a large heavy non-aluminum saucepan, combine the chopped canned tomatoes (with their juices), sweet red peppers, Anaheim peppers, onions, and jalapeño peppers.
  • Add the granulated sugar, cider vinegar, salt, bay leaf, celery seeds, ground cinnamon, ground ginger, ground nutmeg, ground black pepper, and pinch of ground cloves.

  • Purée until smooth.

Step 5:

Tips

  • If you prefer a spicier sauce, consider adding more jalapeño peppers or including a pinch of cayenne pepper. For a milder version, reduce the amount of jalapeño peppers.
  • If the sauce is too sweet for your taste, you can reduce the amount of sugar or add a bit of lemon juice to balance it out.
  • If the sauce is too thick, add a bit of water or reserved tomato juice to reach your desired consistency. If too thin, continue simmering until it thickens.
  • For a chunkier sauce, blend only half of the sauce and mix it back in with the unblended portion. This gives a nice texture contrast.
