Magic Lemon Meringue Pie Recipe

For the lemon filling:

1 cup granulated sugar 2 tablespoons all-purpose flour 3 tablespoons cornstarch ¼ teaspoon salt 1 ½ cups water Juice and zest of 2 lemons 2 tablespoons unsalted butter 4 egg yolks, beaten 1 (9-inch) pie crust, baked

4 egg whites ½ cup granulated sugar


In a medium saucepan, whisk together the sugar, flour, cornstarch, and salt. Gradually whisk in the water until smooth.


Cook over medium heat, stirring constantly, until the mixture comes to a boil and thickens.


Remove from heat and stir in the lemon juice, lemon zest, and butter until well combined.


Gradually whisk some of the hot mixture into the beaten egg yolks, then pour the egg mixture back into the saucepan. Cook and stir for an additional 2 minutes. Remove from heat.
